ETKO/Olympus Winery: Plegma 2019
“Xynisteri (85%) und Muscat of Alexandria (15%). Fermentation in old Commandaria barrels (over 10 years) and aged with the lees in the same barrels for 5 months. Then the barrels with the best quality are selected for the final blend. Produktion: rund 3000 Flaschen.
To make this wine I follow the principle of the minimun intervention, that is to say “to intervene just the necessary” to maintain the highest quality.
The result is a complex wine where the varietal aromas ( pip fruits, pinnapple, etc) combined in harmony with the aromas from the fermentation, aging and of course the delicate aromatic contribution of the Commandaria wine that is absorbed in the oak barrels (vanilla, honeycomb, cumin, turmeric). The wine has a silky texture with a savory aftertaste.” (Önologe Santiago Martinez)
Das griechische Wort “Plegma” bedeutet: Geflecht, Komplexität. – Und das ist der richtige Name für diesen aussergewöhnlichen Xynisteri. Der neue Wein der Etko Winery zeigt, wie vielfältig die Stilistik der grossen autochthonen Rebsorte Xynisteri ist.
Wolfgang Beiss (Önologe): “Mit fruchtig, blumigem Aromenspiel (Blumenwiese, Gewürze, Kräuter) in der Nase und am Gaumen wirkt dieser Wein zunächst betörend, dann animierend und verfüh-rerisch, denn schon der nächste Schluck schmeckt nach mehr und öffnet einen nächsten Level von spannenden Aromen. Vom Muscat d’Alexandrie (15%) hat dieser Wein seine speziellen Muskateller-ähnlichen Geschmacksnuancen, die Weichheit und Balance. Vom Xynisteri die Frische, Spritzigkeit und charaktervolle Säure, die als Unterbau bestens gelegen kommt und überhaupt nicht hart wirkt. Dieser Tropfen ist empfohlen zu frischen, mediterranen Gerichten mit Fisch, Meeresfrüchten, daneben Riz Casimir und auch anderen Speisen unter Einfluss von orientalischen wie auch asiatischen Gewürzen. Ein Genuss für Liebhaber, die gerne noch 1-2 Punkte auf meine 88 von 100 möglichen Punkte drauflegen können!”
Ivan Barbic (Master of Wine): “Zitronengelbe Farbe, intensive und komplexe Nase, Vanille und reife gelbe Pfirsiche; fülliger Gaumen, intensive, komplexe Frucht nach Zitrusaromen und Rosinennoten, auch gut eingebundene Vanille- und Röstaromen, präsente, gut eingebundene Säure, ausgewogen, dicht und mit langem Abgang. Aromatischer und fülliger Wein, wenn auch etwas gewöhnungsbedürftig aufgrund der Aromatik von getrockneten Trauben.” 16+/20 trinken – 2027
Santiago Martinez Polo (Önologe bei Etko): “Both Plegma 2018 and 2019 wines followed the same winemaking process, excepting the barrel ageing time, for Plegma 2019 was longer, that was about 8 months. Also the barrels were not the same ones. I think the main differences between the two respond to the different characteristics of the year, as normally happens with all wines. Furthermore, Plegma is a wine that is created from the complexity of selecting and assembling different barrels, to find the final blend. This is an original wine with its own authentic style, or at least that is what is intended. Not forgetting that we are in the Mediterranean, this wine is an expression of the Xynisteri variety in Omodos, harvested with good maturity, mixed with Muscat of Alexandria 15%, perhaps the most representative variety of the southern Mediterranean, and very intense. Muscat is somewhat early harvested to enhance the tropical aromas. Attending the winemaking process the most characteristic of this wine is the fermentation and short aging in Commandaria barrels, barrels over 12 years old, which gives it some very interesting and unique nuances: oriental spices and light toasted background that are reminiscent of Commandaria and sherry brandy, but just a little touch. The main idea was to create a sophisticated wine made with this novel methodology of using Commandaria barrels. To my surprise, I realized that not only did the commandaria barrel add an interesting complexity, but that it enhanced the fruit over anything else (terpenes, thiols and fermentative aromas) and of course a rich mouthfeel due to the ageing with the lees. Creating a style with a lot of identity: main local grape variety, both indigenous from the warmest Mediterranean, expression of terroir, nuances of Commandaria the flagship of Cyprus.”
